How to make sunny side up sweet potato sausage plates

Bake the sweet potatoes. Preheat your oven to 325°F. Scrub the sweet potatoes with water to get any lingering dirt then pat dry. Pierce each one several times with a fork, rub lightly with olive oil, and season with salt. Bake for 50 to 70 minutes, or until they’re completely tender when pierced with a knife.

Cook the sausage. While the potatoes finish baking, cook your breakfast sausage links in a skillet over medium heat until browned and cooked through. Transfer to a plate lined with a paper towel to soak up any excess grease, and cover with foil to keep warm.

Fry and baste the eggs. Add a little more oil to the skillet if needed. Crack in the eggs and cook over medium-low heat until the whites are mostly set. Tilt the pan and spoon the hot oil over the tops of the eggs—aim for the whites of the egg around the edges of the yolks, but don’t baste oil over the yolks themselves! Repeat until the whites completely set and there aren’t any translucent parts. Preparing your eggs this way results in an ooey gooey yolk and crispy edges, but none of that mucus-like egg white nonsense.

Assemble the potato vessels. Slice each baked sweet potato lengthwise and gently fluff the inside with a fork. Season with a kiss of salt and pepper; this ensures the flesh of the potato gets seasoned. Nestle four sausage links into each potato, then top with one sunny side up egg.

  • Sprinkle on shredded cheddar, pepper jack, feta, or goat cheese.

Steps of preparation

  1. Preheat the oven to 325°F.
  2. Pierce the sweet potatoes several times with a fork. Rub each one with 1/2 tablespoon olive oil and season lightly with salt. Remove from oven with tongs but keep them wrapped in their foil to keep them warm while you finish preparing other ingredients**.
  3. During the last 10 to 15 minutes of baking, start to cook your breakfast sausage links in a skillet over medium heat until browned and fully cooked. Remove and place on a plate or cutting board that’s lined with a paper towel to absorb any excess grease. Cover with foil to keep warm.
  4. Wipe out any sausage bits before adding the remaining olive oil to the same skillet so that the eggs don’t stick. Crack your eggs into the pan and fry them over medium-low heat, basting the tops with hot oil until the whites are set and the edges are crisp***. Transfer to the same paper towel as your sausage so that any lingering oil gets absorbed as well.
  5. Remove the foil from your sweet potatoes (carefully, as they’re still probably hot.) Slice each baked potato open lengthwise and fluff the inside with a fork. Season with a pinch of salt and pepper. Fill each potato with four breakfast sausage links and top with a sunny side up egg. Season your egg with additional salt and pepper and garnish the whole plate as desired before serving. Enjoy warm and fresh!

Notes

*Sweet potatoes vary in size, and ovens vary as well, so baking time may range from 50 to 70 minutes or more. In my oven, I’ve found that 60 minutes at 325°F is perfect for a medium-sized potato.

**Bake the sweet potatoes ahead of time for an even faster breakfast during the week.

***For runny yolks, remove the eggs as soon as the whites are set. Cook a little longer if you prefer a firmer yolk.
